Taco Salad (Vegan or Plegan)

Okay, awesome easy yummy happened tonight. All from a Mom friend’s family meal at CC school on Monday. She had a mixture of baked chicken chunks, chopped red pepper, chopped 1/4 of an onion and brown rice with soy sauce all mixed together. So my wheels were turning on how I could do all of that with plants. And I literally crave taco seasoning. So here is what I came up with.

#tacosaladbyfitwithfe TACO SALAD (VEGAN or PLEGAN) 1/2 bag of frozen riced cauliflower 1 chopped red pepper 1/4 chopped onion 1/2 c (dry measure) sprouted lentil mix (cook the 1/2 cup dry measure) 1/2 c black beans Chopped Romaine lettuce 1 packet of MSG free taco seasoning or 3 TBSP of Flavorgod Everything or Taco Tuesday spice. Add additional salt as to your taste. I just cooked the lentils separate in a saucepan, and when they are done, add the cauli rice to warm through. Sautéd the onions and peppers together for a bit to get them soft then mixed it all together. Optional toppings: Pico, Smashed avocado or guacamole, roasted or steamed potatoes.
